Bleu Bistro enters OSJ gastronomy scene

Bleu Bistro, the newest eatery to move into the trendy Old San Juan gastronomic neighborhood, recently opened its doors to offer locals and tourists alike a taste of French fusion cuisine.

Through a start-up investment of about $75,000, owner Irma Morales established Bleu Bistro in the historical Plaza de Armas Hotel, at the heart of the historic city, after a year of developing the neo-bistro concept.

“Part of our objective as a member of the Old San Juan community is to contribute in the sustainable development of commerce and tourism and improve the quality of life of our neighbors. Plaza de Armas is a forever trendy, yet classical neighborhood,” said Morales, of the 500 square-foot eatery that can sit up to 40 people.

Manning the kitchen is Maricao native Chef Aníbal “Chefo” Suárez, who will be creating his menu of tasty and healthy dishes, including the Cordon Bleu sandwich, a breaded chicken breast with gruyere cheese in a baguette, and the Grouper Fillet with mashed root vegetables “a lo Bleu.”

“Bleu Bistro connects people with our island, our history and international trends through gastronomy… that comes with a view to Plaza de Armas — a warm and cosmopolitan scene,” Morales said, adding the new restaurant is creating nine new direct and four indirect jobs.

“Bleu is an experience to tell, we are gaining customers every day, they come once and they keep coming. That is why we expect a steady growth in the following months,” she said.

Bleu offers take out and delivery service in Old San Juan for parties of three or more.
