Royal Isabela hosts dinner to back Conservation Trust

Since its earliest days, Royal Isabela — the golf and private membership club on the breathtaking cliffs of northwest Puerto Rico — has been committed to preserving and protecting the land it inhabits and the surrounding environment.

On Feb. 20th, as part of this ongoing effort, the resort will host an evening with David Pasternak, the New York chef who helped establish the property’s La Casa restaurant and who was recipient of the 2004 James Beard Award for Best Chef – New York.  Together with Executive Chef José Carles-Fábregas, they will cook a three-course dinner —with the freshest products from local waters and gardens.

What will be served? Even the chefs don’t know. On Feb. 19, they will go on a fishing trip from Puerto del Rey Marina, to catch the main course. Once in the net, they will comb local markets and the resort’s gardens for the side dishes.

Open to the public at $199 per person (plus tax and service charge), the event will raise funds for El Pastillo Conservation Trust, which was established by Stanley and Charlie Pasarell, natives of Puerto Rico and the founders of Royal Isabela.

The trust’s mission is the preservation of 115 acres of El Pastillo Beach and its surrounding cliffs, which were the club ceded to the Puerto Rico Department of Natural and Environmental Resources.

The Trust established four initiatives regarding the land: security, conservation, and restoration, along with education. The Pasarells also created the Trust to increase the community’s awareness and involvement in insuring that the land will be enjoyed for generations to come.

Guests who wish to stay at the resort will enjoy special rates for the 20 private casitas, the 1,500-square-foot guest homes featuring a private pool.
