Pasta to Go opens 7th location, plans Mexico expansion

Pasta to Go’s new Trujillo Alto location is the chain’s first food truck with drive-thru and delivery service.

The Pasta to Go chain in Puerto Rico, known for its menu of housemade pasta and sauces, has opened its seventh location, this time in Trujillo Alto.

CEO Luis González-Fuentes told News is my Business that the sixth location recently opened in Manatí, with plans for an eighth and ninth in Fajardo and Ponce.

“Fajardo is expected to have a soft opening in July, followed by Ponce in August,” González-Fuentes said. He added that a 10th site in Mayagüez is projected for September.

Looking ahead, González-Fuentes said the company is preparing to expand internationally, targeting Mexico as its next market. He plans to travel there in August to begin raising capital with local investors.

“We’ll be working to finalize a timeline for construction and opening. We’re aiming for a 2026 debut in Mexico,” he said. “It’s a capital-raising format where investors fund the project in exchange for an aggressive return — essentially a loan with healthy annual interest.”

While the brand’s core menu will remain unchanged, some ingredient adjustments will be made to suit local tastes in Mexico.

The new Trujillo Alto location is Pasta to Go’s first food truck with a drive-thru and delivery service. The 30-foot-long, 7-foot-wide unit was built with a $100,000 private investment and created 11 direct and 10 indirect jobs.

In Manatí, the newly opened restaurant spans 2,900 square feet and represents a $500,000 investment. The upcoming Fajardo site will cover 3,300 square feet with a $550,000 investment, while the Ponce project is being developed with a $110,000 investment. Like the San Patricio location, the Manatí and Fajardo restaurants will feature indoor dining, terrace seating and drive-thru service.

Across all seven locations, Pasta to Go has created about 90 direct jobs and 10 indirect jobs.

The company’s leadership includes chef and founder Carlos Rodríguez, Enrique Domínguez, Roberto Soto and González-Fuentes.

Rodríguez launched the Pasta to Go concept in the early 2000s. Three years ago, the team established a new corporation to scale the business. Their first joint venture opened in Carolina two years ago, paving the way for the current growth.

Pasta to Go now operates in multiple formats, including food court kiosks, storefronts, food trucks and full-service restaurants.
