Upscale Dorado Beach eatery, Zafra, reopens after $300K makeover

Framed in the warm atmosphere reminiscent of historic haciendas, featuring exposed ceiling beams, wooden floors, oversized chandeliers and antique gears typical of a sugar plantation, the Dorado Beach Resort recently reinaugurated its Zafra restaurant, following a $300,000 remodeling project.

The “zafra,” Spanish for “harvest,” was the time of the year when sugarcane was cut and processed, respresenting prosperity and economic activity.

“This warm and friendly atmosphere is what we wanted to recreate with this renovation, which has been tempered with all the innovations of modern technology to welcome our guests,” said Federico Stubbe, the executive in charge of several Dorado Beach development projects.

The restaurant features a new Caribbean menu crafted by Chef José Shamil Cedeño that features the freshest seasonal ingredients infused with international flavors. Appetizers include fresh ceviche, conch turnovers in “sofrito” sauce and salmon gravlax, while main dish options list tuna on spinach in a tomato vinaigrette, lamb chops or ribeye prepared with different sauces to taste.

The upscale eatery is part of the Dorado Beach golf complex, located next to the swanky Member’s Lounge. The restaurant is open to the public.
