Kueros Island Bar & Kitchen restaurant opens in Old San Juan

Kueros Island Bar & Kitchen, a new restaurant on the second floor of Hotel Rumbao, a Tribute Portfolio by Marriott in Old San Juan, showcases a unique menu that blends Puerto Rican dishes with international flavors.

The restaurant is also a space where Puerto Rican culture is highlighted in both their dishes, decor, ambiance, and music.

Chef Israel Rodriguez, with more than 17 years of experience, leads the culinary team. After eight years in various Florida hotels, he returned to Puerto Rico aiming to create exceptional culinary experiences. 

“It’s an honor to take every dish to the next level, fusing flavors with iconic and high-quality ingredients from our Puerto Rican culture and other elements of international cuisine to ensure it delights the palate in every bite,” Rodríguez stated. “The ingredient combinations were inspired in creating memorable experiences for our guests.”

His culinary journey began in his youth, watching his mother and grandmother cook. Rodríguez, a graduate of Ana G. Méndez University’s Culinary Arts program, won the 2021 Central Florida Hotel & Lodging Association Heat Ultimate Chef Competition.

Kueros offers breakfast, lunch and dinner, featuring dishes like Coquito French Toast with local berries and coquito glaze and Chicharrón Black Grouper with a crispy crust, coconut truffle risotto, and papaya-avocado relish. Other menu items include Torched Tuna Poke Pegaitos and a fresh Aguachile Ceviche served in a conch shell.

The restaurant caters to all dietary needs, offering vegan, vegetarian and gluten-free options. Its cocktail menu blends modern and classic mixology, with more than 50 wine varieties from California, Chile and Europe.

Spanning 1,800 square feet plus a 1,000-square-foot terrace, Kueros can host up to 140 guests inside and 80 on the terrace, overlooking San Juan Bay. It has several spaces for private events.

“We’re committed to offering a very special gastronomic experience with traditional Puerto Rican dishes presented with a modern twist and a great lounge area to enjoy the beautiful sunsets,” said Rumbao Hotel General Manager Wilfredo Marrero. “We’re focused on delivering an exclusive service to our guests and music to complement their unique experience.”

Besides its unique dining experience, the restaurant hosts Open Mic nights on Wednesdays and live music from Thursday to Saturday.
